Cuban Style Rice

Total time: 40 min, 4 servings

2 cloves of garlic minced 3 strips of bacon chopped (optional) 1/2 yellow onion (chopped) 1/2 green or red bell pepper (chopped) 1 jalapeno (diced) 1 can of Black beans (not drained) 1/4 tsp Oregano 1 tsp salt A pinch of cumin 1 bay leaf 1/2 tsp black pepper (ground) 7/8 cup water 3/4 cup white rice (uncooked)


Cook bacon over medium heat for about 6 mins or until golden brown in a pot. Added onion, peppers and garlic to the bacon and sauté until the vegetables are limp and translucent for about 6mins. Add salt, bay leaf, cumin, oregano and rice and stir for 1 min. Add beans, bean liquid and water to the pot. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 25 to 35 minutes. Allow pot to sit covered off heat for 5
